Apple-Mustard Chicken Tenders
Total Time Prep/Total Time: 30 min. Makes 6 servings

Ingredients

1-1/2 pounds chicken tenderloins
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
2 small Granny Smith apples, thinly sliced
1/2 cup packed brown sugar
1/4 cup stone-ground mustard

Directions

Sprinkle chicken with salt and pepper. In a large skillet, heat butter over medium heat. Add chicken; cook 4-6 minutes on each side or until no longer pink. Remove from pan.
Add apples, brown sugar and mustard to same pan; toss to combine. Cook, covered, over medium heat 3-4 minutes or until apples are tender. Stir in chicken; heat through.

Supplies:
Embroidery floss (don't separate it, we're going to use all 6 strands)
Size C hook (I like Susan Bates hooks for working with embroidery floss)
Tapestry needle
Poly-pellets (very small amount!)
Scissors

ch 15, sl st to first ch to form a ring (be careful not to twist stitches)
R1: ch 1, sc in each ch around, sl st to first sc to close round (15 st)
R2-8: ch 1, sc in each st around, sl st to first sc to close round (15 st)
Fasten off.

**Note: If you want to make yours like I made mine, I changed colors at R2, R4, R6, and R8. The rainbow 'stone' I changed color at every row (it's only 7 rows too, because I wanted mine to be Roy G. Biv accurate)**

End of Hermitcraft season 10

It was announced that season 10 will end this month! There are many activities planned for this month, games etc., including a big event on the 20th for which every hermit can invite one guest.

I enjoyed season 10 a lot and I'm sad that it's almost over. I'm going to miss the postal service and all the games, I'm sad that some storylines won't have more time to play out like fight club or whatever Cleo was planning to do to with Cub, and I'm crossing my fingers all hermits will have time to bring their projects to a point where they're satisfied (particularly looking at Joe and Impulse here.)

At the same time I'm excited for a new season, for whatever they might be doing in-between seasons, for the other announcements coming at TwitchCon that were teased, and of course for the world download so I too can try playing Ghastketball, and Ravager Rush and all the other games.

I hope to make a list of my personal highlights of season 10 before it's done, featuring great moments like Cleo's ride of spite and Scar stealing Grian's Mending book and Doc being sentenced to skyblock.

Our prompt for September is nut-free!

While I've got you here, let's talk about coconut. It's not a nut. Botanically speaking, it's a fruit, and because it's rare for tree nut allergens to cross-react with coconut, I don't treat coconut as a nut for tagging purposes. That means something can have the nut-free tag and still have coconut in it. Just something to keep in mind while you're browsing the comm or tagging your posts.

To fill this nut-free prompt, you can:

  1. Slide into the comments of this post and share a link to a recipe, product, or resource and why you like it.
  2. Write up a favorite recipe and post it to the comm.
  3. Post a review of a related product or cookbook to the comm.
  4. Try someone's recipe and reply to their post (or comment) with any changes you made and how it turned out.

Per the [site community profile] dw_news post regarding the MS/TN blocks, we are doing a small code push shortly in order to get the code live. As per usual, please let us know if you see anything wonky.

There is some code cleanup we've been doing that is going out with this push but I don't think there is any new/reworked functionality, so it should be pretty invisible if all goes well.

A reminder to everyone that starting tomorrow, we are being forced to block access to any IP address that geolocates to the state of Mississippi for legal reasons while we and Netchoice continue fighting the law in court. People whose IP addresses geolocate to Mississippi will only be able to access a page that explains the issue and lets them know that we'll be back to offer them service as soon as the legal risk to us is less existential.

The block page will include the apology but I'll repeat it here: we don't do geolocation ourselves, so we're limited to the geolocation ability of our network provider. Our anti-spam geolocation blocks have shown us that their geolocation database has a number of mistakes in it. If one of your friends who doesn't live in Mississippi gets the block message, there is nothing we can do on our end to adjust the block, because we don't control it. The only way to fix a mistaken block is to change your IP address to one that doesn't register as being in Mississippi, either by disconnecting your internet connection and reconnecting it (if you don't have a static IP address) or using a VPN.

In related news, the judge in our challenge to Tennessee's social media age verification, parental consent, and parental surveillance law (which we are also part of the fight against!) ruled last month that we had not met the threshold for a temporary injunction preventing the state from enforcing the law while the court case proceeds.

The Tennesee law is less onerous than the Mississippi law and the fines for violating it are slightly less ruinous (slightly), but it's still a risk to us. While the fight goes on, we've decided to prevent any new account signups from anyone under 18 in Tennessee to protect ourselves against risk. We do not need to block access from the whole state: this only applies to new account creation.

Because we don't do any geolocation on our users and our network provider's geolocation services only apply to blocking access to the site entirely, the way we're implementing this is a new mandatory question on the account creation form asking if you live in Tennessee. If you do, you'll be unable to register an account if you're under 18, not just the under 13 restriction mandated by COPPA. Like the restrictions on the state of Mississippi, we absolutely hate having to do this, we're sorry, and we hope we'll be able to undo it as soon as possible.

Finally, I'd like to thank every one of you who's commented with a message of support for this fight or who's bought paid time to help keep us running. The fact we're entirely user-supported and you all genuinely understand why this fight is so important for everyone is a huge part of why we can continue to do this work. I've also sent a lot of your comments to the lawyers who are fighting the actual battles in court, and they find your wholehearted support just as encouraging and motivating as I do. Thank you all once again for being the best users any social media site could ever hope for. You make me proud and even more determined to yell at state attorneys general on your behalf.

ISRAELI SALAD

ISRAELI SALAD
Prep time 20 minutes total time 20 minutes’ servings 4 as a side

INGREDIENTS

1 and 1/2 cups (211g) Persian cucumbers (~2 cucumbers)
1 cup (157g) cherry tomatoes
1/4 cup (15g) Italian flat-leaf parsley
3 tablespoons (27g) diced red onion

1 and 1/2 tablespoons (23mL) freshly squeezed lemon juice
1 tablespoon olive oil
1/4 teaspoon paprika
Fine sea salt and freshly cracked pepper

INSTRUCTIONS

SALAD: In a medium-sized bowl, combine the cucumbers, tomatoes, parsley, and red onion.

DRESSING: In a small bowl, stir together the lemon juice, oil, paprika, and salt and pepper to taste (I add 1/4 teaspoon salt and 1/8 teaspoon pepper). Whisk with a fork. Drizzle dressing over vegetables and stir to coat.

Gluten-Free Tres Leches Cake

Gluten-Free Tres Leches Cake
Prep Time 20 minutes Cook Time 30 minutes Chill Time 4 hours Total Time 50 minutes

Ingredients
2 cups (192g) blanched almond flour
½ cup (57g) tapioca flour
½ cup (65g) coconut flour
¼ cup coconut sugar
2 teaspoons baking soda
1 teaspoon sea salt
1 cup dairy-free milk, warmed slightly
¼ cup (50g) melted coconut oil
¼ cup (84g) pure maple syrup
1 teaspoon apple cider vinegar
3 large eggs room temperature, replace with flax eggs for vegan version
2 teaspoons vanilla extract

For the milk topping
½ cup Evaporated Coconut Milk
½ cup Sweetened Condensed Coconut Milk
1 can Coconut Whipping Cream chilled in the refrigerator overnight
Fresh strawberries to garnish

Instructions
Preheat oven to 350ºF and lightly grease an 8x8” square baking pan with coconut oil.
In a large mixing bowl, combine the almond flour, coconut sugar, tapioca flour, coconut flour, baking soda, and salt and whisk thoroughly. Form a well in the center of the dry ingredients.
In a separate bowl, whisk together the dairy-free milk, coconut oil, maple syrup, eggs, apple cider vinegar, and vanilla extract.
Pour the liquid ingredients over the dry ingredients and whisk to combine.
Pour into the pan and spread the batter evenly.
Bake for about 30 minutes, or until a toothpick inserted comes out clean and the cake springs back when pressed with a fingertip. Let cool completely.
Once cool, use a skewer, toothpicks or a fork to make LOTS of holes in the top of the cake. When you think you have enough, make more! You want the milk to really soak into the cake and if you don’t have enough holes, it will only soak into the top layer.
In a separate bowl or liquid measuring cup, whisk together the evaporated coconut milk and sweetened condensed coconut milk. Pour evenly over the cake, spreading as necessary to the edges.
Cover and refrigerate for at least four hours.
When you’re ready to serve, whip the Coconut Whipping Cream according to the directions on the can and spread evenly over the cake. You can also do this before you put it in the fridge, but I find the whipped coconut cream is best freshly whipped.
Garnish with fresh strawberries (or any other fresh fruit) and serve!

Recipe Notes

For the vegan version, replace the eggs with flax eggs. To make three flax eggs, combine 3 tablespoons of flax meal with ½ cup water. Whisk together and let gel for 10 minutes before using.

These dark round 2¾" (65 cm) crackers contain no flour: they’re all seeds (including sesame). In fact the plain flavor is labeled Sesame, enlivened with just enough rock salt and black pepper to make them tasty.

I love them because they have an air pocket in the middle, like a pita bread. This gives them a mighty crunch, and reinforces their structure enough to spread peanut butter or soft cheese on top. They fit well in my kinda-keto diet; three crackers total 14g fat; 8g protein; 4g fiber.

Sesame Flavor Ingredients: Pumpkin Seeds; Sunflower Seeds; Flaxseed; Chia Seeds; Sesame Seeds; Psyllium; Poppy Seeds; Less than 2% of: Black Pepper, Pink Himalayan Salt.

Also available with more flavor, including cumin, caraway, red pepper, and "everything" (garlic & onion).

I ran into these at my amazing local food emporium, but that doesn’t show up on their store finder (limited to US and Canada). They sell direct and via Amazon.
